Day trip to Isla Mujeres. Turtle sanctuary, north beach. Rent a golf cart.

Xplor (14 really cool zip line course, cave rafting/swimming and ATV) I believe it was about $149 a person. Great time.

Cenotes - the beatufil caves 2 or so hours' from Cancun driving. Worth It.

Coba (Cobá, Quintana Roo, Mexico) is amazing! Would be a bit of a drive from Cancun but well worth the time. This was easily the best excursion for the $. Coba's Nohoch Mul is one on the few great pyramids you can still climb.

Xcaret; Xcaret City, Quintana Roo, Mexico was pretty cool, especially snorkeling the underground river! Xcaret, Quintana Roo, Mexico Xcaret The bigger pyramids are cool but your kids will hate the long ride there and back on the hot bus

Moon Palace was really nice!! The beach wasn't great as there was a lot of seaweed but the resort, food, pools, activities. Etc were great!
